COURSE OVERVIEW:

Welcome to the Introduction to Food Microbiology course. This program will equip you with the essential microbiological knowledge and practical understanding required to manage food safety, prevent contamination, and protect consumers from food-borne illness. You will explore the behaviour of bacteria, moulds, fungi, and viruses in food environments, as well as the environmental conditions that encourage or inhibit microbial growth. This course also examines cross-contamination risks, microbiological standards, routine testing, and the safety procedures necessary to keep microorganisms at safe levels in catering, hospitality, and food-handling operations.

This course begins by examining the categories of food poisoning and the different types of bacteria involved in food microbiology. You will explore the characteristics of bacteria, how bacteria are differentiated by their shape, and how some bacteria release poisons known as toxins. This section also explains the process of identifying bacteria, the multiplication of bacteria, and the factors that influence bacterial growth and reproduction. You will explore how bacteria grow in a wide variety of foodstuffs, the nutrients they require, the relationship between pH and bacterial growth, and the environmental factors that enable or limit bacterial activity. This section further examines the factors influencing mould growth, the factors affecting fungi growth, the significance of moulds and fungi to caterers, and the principles of preventing and controlling mould growth.

The next learning area focuses on toxins and food-borne pathogens. You will explore what toxins are, how food-poisoning organisms affect people, and detailed examples of significant bacterial hazards including Clostridium perfringens, Escherichia coli (E. coli), Campylobacter, Salmonella, staphylococcal toxin, botulinum toxin, and Bacillus cereus. This section also introduces the role of viruses in food microbiology, the symptoms and characteristics of Hepatitis A, Hepatitis E, and viral gastroenteritis, and how viral contamination of food occurs. You will explore how viruses are transmitted through shellfish, fruit and vegetables, and through secondary contamination by food handlers.

A further part of the program examines cross-contamination, including contamination from food handlers, insects, and chemicals. You will explore the four main vehicles of cross-contamination and the two main routes by which cross-contamination occurs. This section also explains how to control and prevent cross-contamination through safe food-handling practices, personal hygiene, cleaning regimes, and effective separation of raw and ready-to-eat foods.

The final learning area focuses on microbiological standards and testing. You will explore bacteriological standards, product specifications, and the categories used when adopting microbiological specifications. This section also explains the advantages of microbiological standards, how to maintain them, and the procedures used to keep microorganisms to a minimum during food storage, preparation, and service. You will examine microbiological criteria for foods, routine testing for microbiological contamination, the types of microbiological criteria and their legal status, and the use of microbiological standards, specifications, and guidelines in food production. Finally, you will explore sampling and analysis methods that support accurate monitoring and compliance.

By the end of this course you will be able to understand microbial behaviour in food, identify key pathogens and toxins, prevent cross-contamination, apply microbiological standards, and implement procedures that ensure food safety across a wide range of catering and food-handling environments.

This toy is awesome. It keeps my dog occupied for a good amount of time, which is hard to do! Pretty much any other toy I've gotten for my dogs, they've easily destroyed. The only other toy that they've enjoyed is the KONG Extreme Dog Toy, Large, Black . However, he has have gotten the hang of it and it only takes about 10-15 minutes to get out any treats inside. Also it has a rubbery smell that I don't particularly like. There are three different slits in this pickle toy. For my dog, it takes about 20-30 minutes to work on it and get the treats outs. The crevices are thin enough that it takes them some time to work at it, but flexible enough that you can use pretty much any treat in there. I think the toy is pretty resilient and durable. My dog can chew through anything. I was a bit afraid that they would become frustrated if they couldn't get the treats out that they would just bite through the toy instead. I've had these toys for 2 weeks and so far it's held up without any bite marks or parts chewed off. That's saying a lot. My Malinois even enjoys it without any treats inside. She'll bring it to me like a regular toy. It is a bit on the heavy side so I don't like throwing it around the house, however. Every dog is different but I have to say my dogs really enjoy this. I recommend this toy, and plan on trying out the other Starmark toys.

I purchased this for my 68lb Staffy (but really, all our dogs share/ rotate) because the one he had been using wasn’t very challenging and this one looked like it might force him to work a little harder to get the treats out. I was right! He LOVES it - I love it - they ALL love it! There are 3 fairly deep crevices the you can push small treats down into so the dog has to lick them out (you could also use organic peanut butter - *I don’t recommend ever giving dogs any other type of PB as it contains too much salt, sugar, GMOs & preservatives). I take about 10 or so small “squishy” treats and stuff them as far down as I can and he works for almost an hour to lick them until they’re gooey (LOL) enough to be licked out! My other dogs do the same! All our dogs are rescued and “pitbull types” (except one small breed), so they’re strong chewers, but NOT destructive. ****I frequently see people in reviews complaining that their dog destroyed a toy made for “strong chewers.” There’s a HUGE difference between strong and destructive!! Mine are strong chewers, and we like to keep Benebones around here for the times they have the need/instinct to chew (which often!), but they are not destructive dogs. If you have a destructive dog, there is likely no toy on earth they won’t leave in pieces. Destructive dogs are often that way because their breed/age/required needs aren’t being met, so naturally they attempt to release that pent up energy onto toys (or even furniture/shoes/etc. It’s not the dog’s fault. It’s definitely not a manufacturer’s or seller’s fault. #1 Rule: Know your dog!! If they destroy most toys within minutes, they’re likely lacking exercise. If you’re exercising them to their breed & age requirements and they’re still destructive, you can work on either behavior modification or finding toys that they CAN’T destroy. Benebones, Nylabones, etc are great because they are very well made and even as the dogs chew little pieces off, it creates edges that clean their teeth. Win-Win!! These are things we’ve learned from running a canine rescue & rehab for over 20 years, which means fostering dogs of all backgrounds, personalities, ages and needs (90% of which are pibbles).

Almost the best, and great price point...
I love this toy - I give it to my toughest chewer stuffed up with kibble and p-butter that I've frozen an hour or two - and it's cool to play with unfilled too, as it's pliable and soft/bouncy while being also very durable. Starmark is my 3rd of 3 name brands I will buy for my dogs, due to my need for durability for tough chewers thus limiting what toys/brands I can even pick from (West Paw is one I'm now just trying, and Outward Hound is my usual go to over the years), and to be honest, between price and availability, I really want to move Starmark to my number 1 go to but....from what I can tell, the other two companies have great policies about releasing what/where their products are made (of), and I cannot seem to find out whether or not Starmark is also i.e. food-grade and/or whether they have a guarrented return policy or not so....a star off for that until/unless I can assure myself and you, reader, that the quality is just as good as the other two companies. To be fair though, and due to not being able to find any info on material qualities, this IS the one and only toy I have used, but they are also often sold at many local stores and so many of the other treat-toys in this brand have caught my eye, as far as types of toys available and ease to find if/when a replacement (or double to ship to my sister's dog!) is needed. I am thinking that, from what I've seen/felt at local stores for this brand, the durability is likely on par so...again, all going back to the material choice and manufacturing info, for me, that prevents this being a full 5 stars.

Keeps even the most destructive dogs entertained
I was hesitant to make this purchase but after I bought the starmark everlasting chew ball (which I also highly recommend), I gave this one a try. I was surprised how heavy it was, definitely only to be thrown outside as it is made out of solid rubber and could easily go through the tv screen if not careful. My dog is extremely destructive and this not only is very durable, it also keeps him entertained for up to 30 minutes at a time. I have not used the star mark treats specifically designed for it, but regular kibble fits into the grooves just fine. Also, if you put small pieces of chick-fil-a waffle fries, dogs go nuts for it. UPDATE: This toy keeps my rambunctious beagle mix entertained better and longer than any other interactive dog toys I have bought. Of all the toys my dog currently owns, (Starmark Bob-A-lot, Trixie Chess board, Starmark Treat-Dispensing chew ball, and several Kongs) this toy is by far his favorite and keeps him occupied while I get work done around the house, distraction-free. Because of it's made of such dense material, I do have one potential concern: since it's approximately the same size/weight as a full beer bottle) this toy might not be the best fetching choice if your dog is quick and tries to catch balls/frisbees in mid-air since it could bust up his/her head and teeth with it's momentum if he caught it wrong. - But if you don't plan on using this toy for fetching, it is a fantastic purchase for your furry pal.
